Watermelon Salad

08/13/2012 21:15 ● By Rick McGarry

"But it's the little things that make you happy: a cold, fresh slice of watermelon on a hot summer's day, the crash of blue leaves lulling you to sleep by the sea, the singing of a mermaid (even if it is just your mother!) and the sweet and salty treats of summer."

The Magic Blanket is the fourth book by Litsa Bolontzakis about the changing of the seasons in Greece. She says she wrote the books because: "We’re living in the me generation, and we as parents have to fight the spirit of selfishness and impatience that attacks our children. You can’t hurry the changing of the leaves, the melting of the snow, or the ripening of the fruit. Nature and the seasons teach me patience. Patience is a marvelous quality, and good things come to those who have patience."

On pages 34 and 35 you can find recipes for Koulourakia and Watermelon Salad. Watermelon Salad is a simple, healthy recipe, something you could try to make with your kids while school is out.
